We’ve wanted to vacation on the Washington Coast forever, and decided a Fourth of July getaway in the RV was the perfect opportunity. We considered Astoria, OR and Ocean Shores, but found a gem of a campground in Washington’s original coastal town, Westport.
We’ve been so active all week, boogie boarding, swimming and exploring, that this morning, we decided to spend our Fourth of July relaxing, watching movies, decorating and reorganizing the RV (our project of the moment), whipping up some good eats and kicking back with a few glasses of new wines in our collection.
We slept in and skipped breakfast, so I cooked up bacon wrapped hot dogs smothered in sauteed bell peppers, onions and jalapenos, and queso on a toasted bun with mayo and mustard. We decided beforehand to abandon our low carb lifestyle for the day, and finished off our plates with a hearty side of crinkle cut fries and cool ranch dressing.
After a laid back afternoon of enjoying the fresh sea breeze with all open windows, we uncorked a few red wines and P started slow cooking our ribs for dinner. The barbecue pork ribs were fall-off-the-bone delicious, slathered in our favorite Stubbs BBQ sauce. Not surprisingly, our eyes were bigger than our stomachs and our furry companions, Oliver and Dreifuss, were happy to feast on the half slab of meaty heaven we couldn’t finish.
We finished the evening off with a half-mile drive to the ocean for a stroll along the pier and multiple 10:00 firework shows all around the bay.
