Low Carb Chicken Pot Pies

Rotisserie chicken, carrots, green beans, peas, onions, garlic, thyme, rosemary, cheddar, chicken broth thickened with corn starch and butter brushed puff pastry sprinkled with garlic are all it took to assemble this low carb, warming winter comfort feast. The carbohydrates were reduced by only using crust on top – skipping the bottom layer – and replacing the large amount of flour that usually goes into the filling with a small amount of corn starch. My husband could not stop complimenting me throughout dinner! At the end he said it was the BEST chicken pot pie he’s ever had (he loves chicken pot pie, by the way), and I agree 🙂
