Mexican Taco Appetizer & Amuse Bouche

I made this mouthwatering Mexican appetizer a few hours ago to kick off our New Year’s Eve celebration! They’re soooo delicious! Each bite is crunchy, creamy, melty and meaty with a zing of freshness! They’re like bite size taco salads, or mini won ton tacos!

4 oz. cream cheese or neufchâtel cheese, softened
1 4 oz. can diced green chile peppers
1/3 cup beans, drained and rinsed (small red, pinto or black are great!)
1/2 cup sharp cheddar cheese
1/4 lb. lean ground beef, browned in taco seasoning and cooled
20 won ton wrappers
1/2 cup Pico de Gallo

Preheat oven to 350 degrees. In a large mixing bowl, stir cream/neufchâtel cheese and green chile peppers to cream the cheese. Add beans, sharp cheddar and beef and stir to combine. Spray a muffin tin with oil and press a won ton wrapper into each cup, creating a “crown” shape. Bake won ton wrappers for 5 minutes (This helps them get nice and crispy!). Spoon 1 – 1 1/2 tablespoons of the beef mixture into the center of each won ton wrapper and bake for 15 minutes, or until crown tips become golden and all the cheese has melted. Remove the crowns from the tin and top each with a small spoonful of Pico de Gallo. These are also tasty (and pretty!) with an itty bitty dollop of sour cream on top. Enjoy!
